caramel – hazelnut sticks

These crunchy caramel – hazelnut sticks are just delicious!

Preparation for about 50 sticks

Preheat the oven to 250° C

  • 2 egg whites
  • 175 g sugar
  • 100 g hazelnuts
  • 150 g ground hazelnuts

Beat the egg whites until stiff and add 75 g of sugar, mix well.

Gently caramelize the rest of sugar with large heat in a pan.

Add the hazelnuts to the caramel and toast lightly, transfer the mixture to a baking sheet and let them cool.

Coarsely chop the nut – caramel mixture and add to the stiff egg white.

Add the ground hazelnuts to the batter and knead together.

Wrap the dough in a plastic bag and let it rest in a cool place for about 30 minutes.

Roll out the dough to 1 cm thick on sugar.

Cut the dough in small sticks, try to make them at most 5 x 30 millimeter, they will grow in the oven.

Place the sticks on a baking sheet with parchment paper and cool them for about 30 minutes.

Bake the caramel sticks for about 3 – 5 minutes until light golden, use the middle shelf of the oven.

Transfer them to a wire rack and leave them to cool completely.

The caramel sticks may be stored in a cookie tin for up to 2 weeks.
