apple pie ice cream

If you like apple pie, you will love this delicious ice cream. The smooth and creamy concoction is flavored with apples and a cinnamon crunchy streusel mixture. One scoop just isn’t enough!

Makes about 6 – 8 servings:

For the ice cream:

  • 3 dl milk
  • 3 dl heavy cream
  • 40 g white sugar
  • 40 g brown sugar
  • 3 egg yolks
  • 1/2 teaspoon salt
  • 112 g butter
  • 2 tablespoon vanilla extract

Simmer the butter on medium heat until the butter takes a light-golden brown color.

Remove the pan from heat and allow to cool to room temperature.

Heat the milk and heavy cream in a pan over low heat and bring the mixture to boil.

Stir the egg yolks in a bowl with the sugar and salt until creamy.

Then stir in the hot milk slowly and set the bowl over a hot water bath and stir until the egg mixture it thickened.

Remove the mixture from the heat and whisk in the vanilla extract and the brown butter.

Pour the cream through a sieve into a stainless steel bowl and let cool completely.

Freeze the chilled cream in an ice cream maker according to manufacturer’s instructions.

For the apples:

  • 1 tablespoons butter
  • 2 apples, peeled and sliced
  • 1/2 tablespoon sugar

Melt the butter in a pan over medium heat and add in the apples and the sugar.

Stirring frequently, until the apples have become golden brown for about 10 – 15 minutes.

Remove the pan from the heat and let cool completely.

For the cinnamon streusel:

  • 30 g flour
  • 30 g butter
  • 25 g sugar
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Preheat the oven to 180° C

Combine the flour, the sugar, the salt and the cinnamon and then mix in the cold butter until crumbly.

Place the mixture on a baking sheet and bake for about 10 minutes.

Break apart and stirring the streusel and bake for another 6 – 7 minutes, or until the streusel are golden brown.

Cool the cinnamon streusel to room temperature.

Assemble the ice cream, the apples and the cinnamon streusel:

Add half of the ice cream to a storage container with 3/4 the apple slices and half of the cinnamon streusel. Stir gently to combine. Add in the remaining ice cream and stir once more until well combined.

Serve the ice cream with the remaining apple slices and cover with some streusel.

It’s a go-to dessert combination in winter and now, thanks to your recipe, I can enjoy it all Summer long too (it’s Summer here in Australia… well, the end of Summer. Still over 30 degrees C every day). Thanks for sharing your beautiful recipes and stories. I’ll be following from now on!


  2. You are so right about one scoop not being enough! For an ice cream addict like myself, I’d likely have almost the entire thing eaten in one sitting and then suffer the consequences (ie, my expanded hips!) This looks delicious, Bridget. And I like the retro-looking tray; it ads a sense of nostalgia to a “classic” looking dessert.
